  3. Boil pasta water with salt. After water is boiling, input the linguini and stir for about 9 minutes. Make sure it is “al dente”. Aka: not over cooked..
  4. Before draining the pasta, SAVE half a cup of pasta water..
  5. Input the half a cup of pasta water to your egg mixture & stir for a few minutes..
  6. Put the drained pasta on the bacon pan and stir for a few minutes so the bacon and the oil mix well with the pasta.(On LOW heat).
  7. Lastly, TURN OFF the stove and input your egg/pasta water mixture to the pan with the pasta and bacon. Mix for 3 minutes. Bon apetito..

While the pasta is still really hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. Pour the egg mixture over the pasta. Toss rapidly to coat the pasta without cooking the egg. Remove the pan from the heat and add a big handful of cheese, lots of pepper and a little salt. Garnish with parsley and extra grated Romano.
